what to eat

 

Summer, summer, summer, how I love thee! Growing up it felt like I spent all my time on the beach and to be more precise, in the water. Summer meant that I, a human girl somehow transformed into a seal. That is how I remember my childhoodsummers and this is also how I´ve been spending a huge part of my summerholiday. In the water. Splash! But even a seal got to eat something and summer means that you can gorge on all the fresh vegetables and fruit that is now around. 

 

I like to make Ratatouille and with the first batch I make a soup. Cut aubergine, tomatoes and zucchini into thick slices. Take the biggest casserole you´ve got and pour some oliveoil in it and then layer the aubergine, followed by tomatoes and last zucchini. Continue layering until the top. Inbetween the layers, put garlic cloves and parsil, thyme, basil. Don´t forget salt and pepper. Simmer at very low heat for about 1-2 hours. Now you pour the excess water from the vegetables into another casserole, put some oliveoil in it and some of the vegetables. Finish with freshly chopped herbs and if you like some smoked or dried meat.
